Green gazpacho is a delightful deviation from the traditional chilled tomato soup from Spain. Instead of your typical tomato and garlic puree, this recipe calls for mildly sweet grapes, cucumbers, and celery for a cool soup to sip on a hot summer day.

  • 1 cup green grapes (for the soup)
  • 1/2 cup cucumber (chopped, for the soup)
  • 1 clove garlic (for the soup)
  • 3 stalks celery (for the soup)
  • 1 cup bread (for the soup)
  • 2 1/2 teaspoons sherry vinegar (for the soup)
  • 1 teaspoon kosher salt (for the soup)
  • 1/3 cup olive oil (for the soup)
  • 1 pinch cayenne pepper (for the soup)
  • 1 cup green grapes (sliced for the relish)
  • 1 cup cucumber (diced for the relish)
  • 1 teaspoon jalapeno (diced for the relish)
  • 1/2 cup green tomatoes (diced for the relish)
  • 1 pinch freshly ground black pepper (for the relish)
  • 1/2 teaspoon kosher salt (for the relish)

    Directions

    1. Combine water, grapes, cucumber, garlic, celery, and bread in a blender. Blend at a high speed until very smooth, about two minutes. Make sure to scrape down the sides with a rubber spatula to incorporate everything.
    2. With the blender running, add the sherry vinegar and kosher salt. Slowly drizzle in the olive oil. Once creamy, add in the cayenne and blend for a few more seconds.
    3. Transfer to a bowl or container, cover, and refrigerate until cold.
    4. For the relish, toss all ingredients together until well combined.
    5. Pour gazpacho into a bowl and top with the grape relish. Serve with a drizzle of olive oil.

    So good! So easy to make and a real treat for the tastebuds. I used English cucumbers, tomatillos (instead of green tomatoes), and day old Italian bread. I added a little bit more cayenne pepper and a few more jalapeños (and I kept the grapes whole for the relish). The results were awesome. Bursts of refreshing flavors in every bite. My mouth couldn’t make up its mind if it was enjoying an appetizer, a soup, a smoothie, or a dessert. Can’t wait to serve this to friends.

    Very tasty. Only used tbsp of olive oil. And 500 g grapes. Recipe was only enough for three bowls. Served with kampioentje. Next day soup tasted even better. Next time double soup quantity!
