Description

If you've only ever had red gazpacho made with tomatoes, you're in for a treat. This green version is equally authentic and just as refreshing. It gets its hue from cucumbers, green bell pepper, spinach, and basil, and creamy consistency from the addition of yogurt. Bread and nuts (of your choosing, but almonds are traditional) lend body to the soup, sherry vinegar a shot of acidity that balances all the flavors. Serve well chilled.

Ingredients

  • 2 cucumber
  • 1 slice bread
  • 1 clove garlic
  • 1 teaspoon sugar
  • 1 stalk celery
  • 1 green bell pepper
  • 100 grams nuts
  • 100 grams spinach
  • 1 handful fresh basil
  • 3 tablespoons sherry vinegar
  • 2 tablespoons plain yogurt
  • 150 milliliters olive oil
  • fresh parsley
  • ground black pepper
  • salt

Directions

  1. 1Add the cucumbers, bread, garlic, sugar, celery, bell pepper, nuts, spinach, basil, vinegar, yogurt, oil, and a pinch each of parsley, black pepper, and salt. Add to a blender and puree until smooth.
  2. 2Strain to remove any trace of seeds or skins. Add additional salt and black pepper to taste. Serve with carrot sticks as a garnish.
