  • 3 tablespoons oil
  • 14 ounces chicken breasts (cut into strips)
  • 3/4 ounce ginger root (peeled and finely diced)
  • 2 onions (peeled and finely diced)
  • 1 clove garlic (peeled and finely diced)
  • 2 chili peppers (seeded and finely diced)
  • 2 tablespoons green curry paste
  • 1 2/3 cups chicken stock
  • 3/4 cup unsweetened coconut milk
  • 1 bunch scallions (chopped into approx. 1 1/2 inch pieces)
  • 1 bunch cilantro (coarsely chopped)
  • 3 tablespoons lime juice
  • rice (for serving)

    Directions

    1. Heat 1 tbsp of oil in a pan and cook the meat, turning, until golden brown all over. Heat 2 tbsp of oil in a wide saucepan and sauté the ginger, onion, garlic and chili for 2-3 mins. Stir in the curry paste and sauté briefly. Pour in the chicken stock and coconut milk and cook for about 5 mins, seasoning to taste. Add the chicken and scallions to the curry and simmer over low heat for 2-3 mins. Season the curry with lime juice and serve sprinkled with cilantro. Serve with rice on the side.
