Description

This simplified version of classic Thai cuisine will change up everyone’s daily dinner dish. This dish pairs green curry, a delicious way to prevent cancer, heart disease and Alzheimer’s, with palm sugar, an easy substitute of regular sugar that also has a low glycemic index. This recipe is ready in only 35 minutes and is low in sodium and carbohydrates. As lactose-free dish, it is perfect for anyone in the family!

Ingredients

  • 1 can coconut milk
  • 1 tablespoon green curry paste
  • 1 tablespoon palm sugar
  • 1 tablespoon fish sauce
  • 2 chicken breasts (cubed)
  • 100 grams mushrooms (sliced)
  • 4 ounces baby corn
  • 1 onions (sliced)
  • 250 grams rice (optional)

Directions

  1. 1Place the milk, curry paste, sugar, and fish sauce into a saucepan and simmer together on low heat until the flavors have married.
  2. 2After 5 minutes, add the cubed chicken. Then, add the mushrooms, baby corn, and onions.
  3. 3Simmer on medium heat for 10 to 15 minutes.
  4. 4Serve on rice, if desired.
