  • 2 tablespoons vegetable oil
  • 1/2 teaspoon brown mustard seeds
  • 4 clove
  • 6 green cardamom pods (lightly crushed)
  • 1 piece cinnamon sticks
  • 1 small onion (finely chopped)
  • 5 centimeters fresh ginger (/2in piece, peeled and quartered)
  • 2 large garlic cloves
  • 1 teaspoon ground coriander
  • 300 milliliters coconut milk (/10½fl oz)
  • 4 green chilies (left whole)
  • salt (to taste)
  • 100 milliliters water (/3½fl oz)
  • 10 curry leaves (available from some supermarkets and Asian grocers)
  • 1 teaspoon freshly ground black pepper
  • 3/4 teaspoon garam masala
  • 500 grams salmon (or firm white fish fillets, cut into large pieces)
  • 3 teaspoons lemon juice
  • 50 grams cilantro leaves (fresh, and stalks, chopped)
