  • 2 pounds pork knuckle (1/2-inch cubes)
  • 2 onions
  • 2 cloves garlic
  • 4 poblano chiles (roasted, peeled and seeded)
  • 1 green bell pepper (chopped)
  • 2 jalapeno chilies
  • 1 pound tomatillos (cut in half)
  • 1 bunch cilantro stems (chopped)
  • 4 lime juice
  • 2 teaspoons kosher salt
  • tortillas (As needed)
  • cotija cheese (As needed)
  • 1 red onion (thinly sliced)

    Directions

    1. 1. In medium sauce pot cook onion, garlic, peppers, cilantro stems, and tomatillos over medium/high heat for 15 minutes or until tomatillos are soft
    2. 2. Blend tomatillo mixture with cilantro leaves and lime juice in food processor
    3. 3. Season pork and brown meat over high heat
    4. 4. Add green sauce to pork, cook until pork is tender and season to taste
    5. 5. Serve with tortillas, cheese, and red onion
