Ceviche is a traditional Latin American dish featuring raw seafood that is marinated in lime or lemon juice. This recipe for Green Ceviche with Guacamole is made with frozen perch fillets to ensure no harmful bacteria. Seasoned with fresh garlic, coriander, spring onions, red chili peppers, and lime juice, this ceviche is a refreshing dish on a warm summer afternoon. Serve with your favorite guacamole and tortilla chips for a quick lunch or snack.

Ingredients

  • 400 grams perch fillets (large, sushi-grade, frozen and defrosted)
  • 1 clove garlic (chopped)
  • 2 spring onions (chopped)
  • 1 bunch fresh coriander (or 20 gr. chopped)
  • 1 red chili pepper (fresh, chopped)
  • 2 limes
  • sea salt
  • ground black pepper

Directions

  1. Cut the perch into small pieces, ideally while still slightly frozen to aid cutting. Season and set aside.
  2. In a food blender, add the garlic, chili, spring onions, coriander and lime juice. Blend all the ingredients into a sauce.
  3. Pour the sauce over the fish and stir well so that the fish is infused with the flavor.
  4. Leave to rest in a colander over a bowl. As the fish marinates the liquid will drain into the bowl.
  5. Leave in the refrigerator until ready to serve.
  6. Serve with guacamole and tortilla chips.
