Ingredients

  • 1 tablespoon olive oil
  • dried oregano (ground)
  • dried basil (ground)
  • 1/2 teaspoon garlic powder
  • salt
  • ground black pepper
  • 3 zucchini (medium-sized)
  • 2 tomatoes (sliced)
  • 6 black olives (chopped)
  • 1/4 cup goat cheese (crumbled)
  • 1 teaspoon olive oil
  • 1 teaspoon balsamic vinegar

Directions

  1. Mix the olive oil with a pinch of oregano, a pinch of basil, and the garlic powder. Add salt and pepper to taste and set aside.
  2. Cut the zucchini into sticks, then cover with the oil mixture and pan-sear on a hot skillet. Turn the zucchini over every 3 minutes to cook on all sides. Remove and let cool.
  3. Cut into medium pieces and mix with the tomatoes, olives, and goat cheese.
  4. Mix the ingredients for the vinaigrette together to obtain a smooth and even mixture.
  5. Dress the salad, mix carefully, and serve.

This recipe is healthy and delicious too. I also make this with spaghetti squash, as it can be interchanged for zucchini. I use 2 tbsp. of olive oil and then added some more. It seemed like it needed some more moisture, and I love olive oil. It is a very easy salad that is a change from the normal cheddar cheese style. I can't get enough of it.
