Ingredients

  • 4 cups brown rice (cooked leftover)
  • 1 tablespoon olive oil
  • 1 onions (large, chopped fairly small)
  • 1 red bell pepper (large, diced into 1/2 inch pieces)
  • 2 teaspoons greek seasoning (I use Penzeys Greek seasoning, which is a mixture of salt, Turkish oregano, garlic, lemon peel, black pepper, and marjoram.)
  • 6 ounces feta cheese crumbles (about 1 cup, don't buy pre-crumbled feta, buy a block and crumble it)
  • 1/4 cup chicken stock (preferably homemade chicken stock)
