Delicious simple and fresh. This is a healthy lunch option that tastes as good as it is for you!! Great for weekly meal prep. Make a large batch and refrigerate in serving size containers.

  • 20 ounces cheese tortellini (refrigerated)
  • 1/2 cup grape tomatoes (halved)
  • 1 cucumber (large, chopped)
  • 1 cup kalamata olives
  • 1/2 cup red onions (diced)
  • 3/4 cup crumbled feta cheese
  • 1/4 cup virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 clove minced garlic
  • 1/2 teaspoon oregano (died)

    Directions

    1. Combine olive oil, vinegar, garlic, oregano and salt and pepper. Set aside for dressing.
    2. Cook tortellini as directed. Drain. Rinse with cold water.
    3. In a large bowl, combine tortellini, cucumber,tomatoes, olives, onion and feta with dressing. Toss until well mixed.
    4. Serve cold.
