  • 6 cups frozen hash brown potatoes (I used the cubed potatoes with peppers - not the shredded)
  • 10 large eggs (beaten)
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt
  • 2 teaspoons crushed red pepper
  • 1 cup fresh basil (chopped)
  • 1 teaspoon dried oregano
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • 1 jar roasted red pepper (cut into small pieces)
  • 1 1/2 cups shredded mozzarella
  • 4 ounces feta (crumbled)
  • 3 tablespoons olive oil
  • 1 teaspoon minced garlic (or 2 cloves chopped)
  • 1 can black beans (rinsed and drained)
  • 1 pint grape tomatoes (halved)
  • 4 scallions (thinly sliced, both the white and green parts)
  • 8 ounces spinach
  • sour cream (for serving, optional)
  • salsa (for serving - highly recommend this as a garnishment)
