Ingredients

  • 2 1/4 pounds white cabbage (trimmed and shredded)
  • 7 ounces carrots (peeled and coarsely grated)
  • 1 bunch spring onions (trimmed and shredded, 1 reserved for garnish)
  • 4 tablespoons olive oil
  • 6 tablespoons white wine vinegar
  • 1/4 teaspoon sugar
  • 1/3 cup raisins
  • 1/3 cup pinenuts (toasted)
  • 3 ounces black olives
  • lemon wedges (to serve)

Directions

  1. Toss cabbage with 1 tsp salt and set aside for 10 mins. Add carrots and spring onions. Whisk oil, vinegar and sugar and season then toss with cabbage mixture. Add raisins, pine nuts and olives. Serve on a platter with lemon wedges and reserved spring onion.
