Ingredients

10 slices bacon
600 grams leeks (small)
250 milliliters broth
2 tablespoons whole grain mustard
2 tablespoons clotted cream
60 grams shredded cheddar cheese
3 tablespoons bread crumbs
olive oil

Directions

1Preheat the oven to 190 °C.
2Peel the leeks, wash them.
3Cut them into sections of 4 cm.
4Heat a frying pan, with a tablespoon of olive oil, and fry the bacon cut into small pieces so it becomes golden.
5Add directly to the pan and cook the leeks over low heat to make them more tender.
6Add the stock and mustard and continue cooking for 10 minutes.
7Add the cream and most of the grated cheese (do not hesitate to remove a little of the cooking liquid before adding the cream if there is too much).
8Place the vegetables in a baking dish, then cover with the breadcrumbs, remaining cheese and a little olive oil. Bake for 20 minutes so they will be well browned.
