- 1 celery stalk
- 100 grams nuts
- alfalfa (/Roquette/watercress-your choice)
- 75 grams mayonnaise (homemade)
- 2 tsp. lemon juice
- 2 tsp. water
- salt
- pepper
- 100 grams blue cheese (light, or gorgonzola type)

Directions
- For the sauce:
- Place all ingredients in a blender until you get a creamy mixture.
- Cut the apples into thin slices with a knife or a mandolin.
- Arrange the sliced apples on a plate with the celery, walnuts and the greens.
