A light blue cheese pairs perfectly with this apple-centered salad. Featuring crisp and tart granny smith apples, celery and walnuts add the perfect amount of crunch, and your favorite greens provide some leafy goodness. Light and healthy, this salad makes a great lunch item for guests or just for you.

Ingredients

  • 3 granny smith apples (or any variety of crisp apple)
  • 1 celery stalk
  • 100 grams nuts
  • alfalfa (/Roquette/watercress-your choice)
  • 75 grams mayonnaise (homemade)
  • 2 teaspoons lemon juice
  • 2 teaspoons water
  • salt
  • pepper
  • 100 grams blue cheese (light, or gorgonzola type)

Directions

  1. For the sauce:
  2. Place all ingredients in a blender until you get a creamy mixture.
  3. Cut the apples into thin slices with a knife or a mandolin.
  4. Arrange the sliced apples on a plate with the celery, walnuts and the greens.
  5. Top it with the sauce.

This salad was a hit with the girls at my office. They each brought one of the ingredients of the salad and I made the dressing. We all enjoyed it and I believe a new trend has begun.
