Egg whites are beaten until stiff and gently folded into the batter, making way for a light, airy cake that's baked until crumb-tender in a springform pan. After a final dusting with powdered sugar, it's ready to be sliced into wedges. For an added indulgence, serve alongside marmalade or fruit compote.

Ingredients

  • 8 eggs (+ 2 egg yolks)
  • 280 grams sugar
  • 280 grams ground almonds
  • 3 ounces white wine
  • 70 grams breadcrumbs
  • ground clove
  • 1 teaspoon rum
  • 100 grams almonds (coarsely chopped)

Directions

  1. Preheat the oven to 180C.
  2. Beat the 10 egg yolks with 200 grams of sugar, then add the ground almonds, the breadcrumbs, a pinch of ground clove, and the rum.
  3. Beat the egg whites, incorporating the remaining sugar by adding it gradually, until beaten to very stiff peaks.
  4. Fold the egg whites into the batter carefully.
  5. Place the batter in a buttered and floured springform pan, add the almonds on the top and bake for approximately 1 hour, or until a toothpick inserted in the center comes out clean.
  6. Remove the cake from the oven, let it cool, and sprinkle it with powdered sugar before serving.

You need 10 eggs for this recipe, which explains the incredibly high calorie count (1030). The batter uses ground almonds in place of flour and it is flavored with ground cloves and rum. It sounds delicious, but I wonder if it could be made healthier with egg substitute.
