Ingredients

  • 4 Ancho chilies (plus another one sliced and lightly fried)
  • water
  • 1/2 cup almonds
  • 0.5 liters milk
  • 6 chicken pieces (thigh and leg)
  • salt
  • ground black pepper
  • 40 grams lard
  • 400 milliliters chicken broth
  • chicken bouillon powder
  • 1/2 cup sesame seeds (roasted)

Directions

  1. Soak the chilies in hot water. Drain, seed, and devein.
  2. In a blender, grind the chilies, almonds, and milk.
  3. Season the chicken with salt and pepper.
  4. In a saucepan, add the lard and sear the chicken. Set aside.
  5. In the same saucepan, add the sauce and cook for 3 minutes. Add the chicken, chicken broth, and bouillon powder.
  6. Cook over low heat for 20 to 30 minutes.
  7. Serve the chicken covered with sauce. Sprinkle sesame seeds on top and garnish with lightly fried ancho chili rings.

Whoever came up with this recipe sure knows how to cook. I made some buttery rice to go with the chicken and some homemade rolls. My family didn't stop talking about this dish for a week. Now they want me to make it again.
