Ingredients

6 pheasant breasts
butter
750 grams white grape juice
1 cup cognac
50 grams walnuts
50 grams sugar
400 grams grapes (white)

Directions

1In a skillet, sauté the pheasant in 20 grams of butter until browned on all sides.
2Add grape juice and cognac.
3Cook for 30 minutes over low heat.
4Add the nuts.
5Make a clear caramel with 50 gr. sugar.
6Pour it in the skillet and cook, covered for 15 minutes.
7Remove the cover and cook for 10 more minutes until the sauce reduces slightly.
8Add grapes.
9Drizzle the pheasant with sauce and serve.
