Description
These grain-free stuffed peppers are simple to make and full of lean protein and tons of flavor! Try topping them with an avocado, salsa, an egg, cheese or all of the above.

- 2 lb. ground turkey
- 6 bell peppers
- 4 jalapenos (chopped)
- 12 oz. yellow corn
- 1 yellow onion (chopped)
- 3 cups spinach
- 1 Tbsp. chili powder
- 1 Tbsp. turmeric
- 1/2 Tbsp. cumin
- salt

Directions
- Preheat oven to 400. Cut tops off of peppers and clean out the inside of the peppers. Place peppers in a greased 9x12 baking dish and set aside.
- Cook ground turkey, onions, and 2 of the jalepenos in a large pan on the stove until turkey is browned. Add salt, pepper, and spices while cooking.
- Once turkey is cooked, mix corn and spinach into turkey and and cook until spinach is wilted.
- Put turkey mixture in a large bowl and mix in the rest of the jalepenos. Fill each pepper full of the turkey mixture. Bake in the oven for 30 minutes, until tops of peppers are browned.
