  • 4 zucchini (large)
  • 1 tablespoon olive oil
  • 1/2 medium yellow onion (finely diced)
  • 1 pound lean ground beef (or turkey, or chicken)
  • 2 garlic cloves (minced)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can petite diced tomatoes (14 oz. per can)
  • 1/2 cup shredded cheese

    Directions

    1. Preheat the oven to 400°F.
    2. Line a large sheet pan with parchment paper. Set aside.
    3. Slice the zucchini in half lengthwise. Use a spoon to scoop the seeds out of the zucchini, creating a 3/4-inch-deep hollow. Arrange the zucchini cut side up on the prepared sheet pan.

    So good! One tip: I used the fire roasted diced tomatoes & chilis can from Trader Joe’s and it gave it a ton of flavor that I think it needed. I used ground turkey and it was very flavorful with the seasoning plus the spicy tomatoes.

    delicious! i do think it needs a little bit more flavoring, but i added some hot sauce to it and it tasted great! i may try adding a few other ingredients next time but ill definitely make this again.
