As if risotto weren't "creamy" enough (consistency wise), here's a version that is literally enriched with not only heavy cream but also gorgonzola cheese, a mixture of which is added when the rice is about halfway through cooking. Unlike many recipes that call for gradually adding the broth, here all of it is added at once and the rice stirred frequently to achieve the proper result. A little of this dish goes a long way, so treat it like a starter or side rather than the main event.

Ingredients

  • vegetable oil
  • 1/2 onion (peeled and minced)
  • 1/2 bell pepper (seeded and diced)
  • short grain rice
  • 200 grams arborio rice
  • 8 ounces white wine
  • chicken stock
  • 4 ounces heavy cream
  • 100 grams gorgonzola cheese

Directions

  1. Saute the onion and bell pepper together in oil until translucent, about 5 minutes.
  2. Add the rice and stir, heating through for a few minutes.
  3. Add the wine and simmer until the alcohol has evaporated.
  4. Add the broth slowly, stirring constantly, until it is completely absorbed and the rice is cooked and creamy in consistency.
  5. In a small bowl, mix the heavy cream and gorgonzola cheese and microwave together until melted.
  6. When the rice is halfway done, add the cheese mixture and continue cooking until the rice is done.

When I first saw this gorgonzola risotto I was questioning what it would taste like. After I made it I was completely dumbfounded at how incredible it was. It produced so much flavor my taste buds didn't know what to do. I plan to make this 5 star dish again next week.
