Ingredients

  • 500 grams flour
  • 200 grams gorgonzola cheese (mild)
  • 30 grams yeast (brewer’s)
  • 150 grams water (approximately)
  • 50 grams lard
  • 50 grams butter
  • 8 grams salt

Directions

  1. Place the flour on a work surface and make a well in the center. Mix the cheese, yeast, water, lard, butter, and the salt in the well.
  2. Knead the dough and shape it into a ball, cover it, and let it rise for 50 to 60 minutes.
  3. Roll out the dough with a rolling pin into a rectangle approximately 1.5 centimeters in thickness, then cut it into 5 centimeter squares or rhombus, brush with beaten egg, place them on a baking sheet leaving some space between each, and let them rise for approximately 30 to 40 minutes.
  4. Preheat the oven to 180C and bake for 20 to 30 minutes, until lightly golden.

The Gorgonzola cheese has a nice flavor and softness that works well for this dish. Cheddar or a mild goat cheese could be used as well if you didn't have any Gorgonzola. They would be good served with thin slices of tart apples or a cranberry relish for an elegant appetizer.
