  • sea salt
  • olive oil (for frying)
  • 8 garlic cloves (peeled and sliced)

  • 4 teaspoons chili flakes (dried, to taste)
  • 2 teaspoons szechwan peppercorns
  • 8 whole star anise
  • 8 tablespoons runny honey
  • 300 milliliters soy sauce
  • 5 tablespoons rice vinegar
  • 600 milliliters Shaoxing wine (or medium-dry sherry)
  • 10 spring onions (trimmed and sliced)
  • 800 milliliters chicken stock
