Gooseberry Streusel Tart

Ingredients

  • 5 1/3 cups all purpose flour
  • 2 1/4 cups butter (or margarine, cut into pieces)
  • 2 1/4 cups brown sugar
  • 2 teaspoons vanilla extract
  • 2 1/4 pounds gooseberries (red and green, washed)
  • 11 ounces lemon curd
  • 1/2 cup heavy cream

Directions

  1. Preheat oven to 350°F. To make the streusel, mix flour, butter, sugar and vanilla extract together until the mixture resembles breadcrumbs. Grease a 13x15 inch baking tray and firmly press 2/3 of the mixture into base and up sides. Mix gooseberries and 2 tbsp lemon curd then spread over base. Sprinkle with remaining streusel and bake for 50 mins. Let cool then cut into pieces. For the sauce, mix cream with remaining lemon curd until smooth and serve with tart.
