Cod is a versatile fish that pairs great with peppers. Both the fish and the peppers are sweet and bold. This Golden Cod with Baked Peppers also includes potatoes and onions, with garlic to add a layer of bite. The potatoes are cut into thin strips for texture and taste. Ingredients

  • 1 cod (pack, migas, soaked and shredded)
  • 700 grams potatoes (straws)
  • 1 onions (chopped)
  • 1 garlic cloves (chopped)
  • 5 eggs
  • chopped parsley
  • 1 red pepper
  • olive oil
  • salt
  • ground black pepper

Directions

  1. 1Slightly scald the cod, drain, and set aside.
  2. 2Fry the potatoes, drain on paper towels.
  3. 3Grill the pepper, cut into strips, set aside.
  4. 4Heat a large skillet with onion, garlic, and little olive oil.
  5. 5When the onion is translucent and golden, add the cod, and cook for a few minutes.
  6. 6Beat eggs with chopped parsley, reserving some for the garnish.
  7. 7Season with salt and pepper.
  8. 8Add the potatoes to the cod, mix well.
  9. 9Add eggs, stir, and cook to taste.
  10. 10To serve, garnish with strips of roasted peppers and chopped parsley. Accompany with a salad.
