Cod is a versatile fish that pairs great with peppers. Both the fish and the peppers are sweet and bold. This Golden Cod with Baked Peppers also includes potatoes and onions, with garlic to add a layer of bite. The potatoes are cut into thin strips for texture and taste. This dinner goes great with a side salad. This dish is not only pretty to look at, it also tastes great!

Ingredients

  • 1 cod (pack, migas, soaked and shredded)
  • 700 grams potato (straws)
  • 1 onion (chopped)
  • 1 garlic clove (chopped)
  • 5 eggs
  • chopped parsley
  • 1 red pepper
  • olive oil
  • salt
  • ground black pepper

Directions

  1. Slightly scald the cod, drain, and set aside.
  2. Fry the potatoes, drain on paper towels.
  3. Grill the pepper, cut into strips, set aside.
  4. Heat a large skillet with onion, garlic, and little olive oil.
  5. When the onion is translucent and golden, add the cod, and cook for a few minutes.
  6. Beat eggs with chopped parsley, reserving some for the garnish.
  7. Season with salt and pepper.
  8. Add the potatoes to the cod, mix well.
  9. Add eggs, stir, and cook to taste.
  10. To serve, garnish with strips of roasted peppers and chopped parsley. Accompany with a salad.

I loved this dish. It's very flavorful and filling, perfect for brunch. I put it under the broiler for a few minutes to get the top toasty and served it with fresh bread and lots of greens.
