Goat Cheese and Red Pepper Prosciutto Rolls

- 4 ounces soft goat cheese
- 1/4 cup basil (finely chopped)
- 1/2 clove garlic (peeled and crushed)
- 4 slices prosciutto (halved lengthways)
- 1 red pepper (roasted and cut into strips)
- 1 tablespoon olive oil
- salad (to serve)
Directions
- Mix the goat cheese, basil and garlic in a bowl and season to taste. Place the prosciutto on a flat surface and spread with the cheese mixture. Top with the red pepper and roll to enclose.
- Heat the oil in a non-stick frying pan on medium. Cook the rolls for 2-3 mins each side, until golden and crisp. Serve with salad.
