If you are not a fan of goat cheese, you can substitute feta or gorgonzola cheese. Be sure to let the lentils soak overnight.

Ingredients

  • 4 tablespoons lentils
  • lettuce (sliced, or spinach)
  • 8 cherry tomatoes
  • 4 tablespoons beets (ground)
  • 2 handfuls corn (roasted)
  • 200 grams goat cheese
  • salt
  • 1 teaspoon mustard
  • 4 teaspoons apple cider vinegar
  • 8 teaspoons olive oil
  • 1 teaspoon honey

Directions

  1. 1Place the lentils in a bowl with cold water and let it sit overnight.
  2. 2Boil the lentils in a small cooking pot at medium heat for 10 minutes.
  3. 3Strain them and soak with cold water.
  4. 4Mix the lettuce (as much as you want), cherry tomatoes, beet, and corn in a salad bowl.
  5. 5Heat the goat cheese in the microwave for 5 seconds. Add to the salad, then salt to taste.
  6. 6Mix the mustard, apple vinegar, olive oil, and honey in a small bowl.
  7. 7Pour the dressing over the salad and serve.
