  • 1 sheet frozen puff pastry (thawed)
  • 8 ounces cherry tomatoes
  • 7 ounces goat cheese (sliced)
  • 3 tablespoons tarragon leaves (fresh)
  • 3 tablespoons olive oil

Directions

  1. Preheat the oven to 400°F. Unroll the puff pastry on a work surface lightly dusted with flour; cut into 4 squares. Roll lightly into 7-inch squares. Arrange the tomatoes, cheese and tarragon in the center of each pastry square. Fold in the corners of the pastry over the filling. Place on a baking sheet. Drizzle with olive oil.
  2. Bake for 20 mins until golden and puffed up. Serve warm or at room temperature.
