Full of unique and delicious tastes, this Goat Cheese Salad is a must make for your next lunch. Iceberg and sorrel leaves provide the basis for this delicious salad crowned with cured goat cheese and pork steak. Drizzled with olive oil and vinegar, this salad is light in calories but hearty in the stuff that counts. Almonds add a lovely bit of crunch to each bite. You can use any meat for this salad or substitute vegetables if you are vegetarian.

Ingredients

  • 6 slices cheese (Palhais Chèvre, or cured goat cheese)
  • 3 pork steaks (cut in strips)
  • salt (to taste)
  • ground black pepper (to taste)
  • 1 tablespoon butter (for steaks)
  • ground coriander (to taste)
  • 4 lettuce leaves (iceberg)
  • 10 sorrel (leaves)
  • 3 tablespoons almonds
  • olive oil (to taste)
  • vinegar (to taste)

Directions

  1. 1Place the cheese in the freezer.
  2. 2Season the steaks with salt and pepper.
  3. 3Melt the butter a frying pan, add the steaks, and saute until golden. Before removing from heat, season with ground coriander.
  4. 4Shred iceberg lettuce and sorrel lettuce leaves.
  5. 5Add the meat and almonds to the lettuce mix, and season with olive olive, fig spray vinegar, and a pinch of salt.
  6. 6Remove cheese from freezer, and cut in slices, and add to the salad.
  7. 7Drizzle a little olive oil on the salad, and grind some pepper on top.
