This must be the simplest, most delicious and light recipe for a pizza I've ever seen! Using the halved pita breads was such a great idea, and the goat cheese is perfect for making pizzas because it melts so nicely, creating a cream-like dressing for the pizza base. The only thing I changed in this recipe is that I sprayed some olive oil over the pitta breads before putting them in the oven. This makes them more moist and more flavorful. The balsamic vinegar sprinkled over the baked ingredients, was also a great touch. Absolutely fantastic!
