The possibilities are endless with these goat cheese bites and the recipe is so simple you'll return to it over and over again. You can use pretty much anything to coat little bite-sized balls of goat cheese, from nuts and seeds to herbs and fruit. The best way to serve these is to use a combination of coatings and set them out on a platter during a gathering. If you have extra left over, simply add them to a salad.

Ingredients

  • 250 grams fresh goat cheese ("petit billy" type)
  • sesame seeds
  • raisins
  • fresh rosemary (chopped)
  • pine nuts (coarsely chopped)
  • walnuts (chopped)
  • cracked black pepper

Directions

  1. Have each coating ingredient that you chose in the cups. In a bowl, mash with a fork goat cheese. Take small amounts of cheese and shape into balls the size of a walnut. Roll each ball into a goat of coating ingredients and place on a pretty dish. Keep cool at least 30 minutes before serving.
  2. Serve as an aperitif or with a green salad.

I love making these with all the different coatings. If you keep your hands a little wet the cheese is less likely to stick. I also toast the nuts that I'm using for a little extra flavor.
