Ingredients

  • 2 cups brown rice flour (or regular all-purpose flour should work, too!)
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon xanthan gum (omit if using regular flour **see note below)
  • 1 tablespoon ground flaxseed (optional–I always like to add them for the omega-3′s)
  • 1/3 cup coconut oil
  • 1/4 agave nectar (or brown sugar)
  • 1/4 teaspoon ginger (each, all spice, nutmeg)
  • 1 tablespoon cinnamon
  • 1/2 cup pumpkin purée
  • 1 eggs (for vegan option, try a flax egg…though, I can not vouch for results. You can try leaving the egg out altogether, too!)
  • 2 tablespoons almond milk (or your favorite milk)
  • 1 cup confectioners sugar
  • 1 tablespoon almond milk
  • 1 teaspoon cinnamon
