    These are REALLY good sugar cookies. They are layered as if the dough is laminated. Crisp, buttery outside. The inside is soft and delicate. Definitely refrigerate your dough before hand. This contributes to the wonderful texture. I baked them for 10 minutes and unless you like browned sugar cookies, I wouldn't do more than that. For availability of ingredients only, I replaced half butter with shortening. For flavor, I used almond extract. Use whatever extract you want.

    These cookies were DELICIOUS! You honestly can't tell that they are gluten free!
