  • 1 pound cottage cheese (whole milk)
  • 2 large eggs (lightly beaten)
  • 1 1/2 cups Parmesan cheese (grated)
  • 1/2 pound brown rice penne pasta (Tinkyáda, tubular pasta)
  • 2 tablespoons extra-virgin olive oil
  • 5 garlic cloves (medium, minced)
  • 28 ounces tomato sauce
  • 15 ounces diced tomatoes
  • 1 teaspoon sugar (whole, optional-- date, palm, or cane)
  • 1 teaspoon dried oregano
  • 1/2 cup fresh basil leaves
  • 1 teaspoon cornstarch
  • 1 cup heavy cream
