  • 8 ounces peanut butter
  • 1 egg
  • 1 pinch salt
  • 8 ounces brown sugar
  • 1 teaspoon baking powder

    Directions

    1. Preheat the oven to 350°F. With an electric mixer, cream the peanut butter, egg, salt and sugar, then mix in baking soda. Form about 24 balls from the batter. Place the dough balls on 2 baking sheets lined with parchment paper. Press the top of each ball twice with a fork (once vertically, once horizontally) to create a diamond pattern on the cookies.
    2. Bake each sheet of cookies one at a time for about 10 minutes each. Remove and allow to cool.
