Ingredients

  • 3/4 cup creamy peanut butter
  • 6 tablespoons brown rice syrup
  • 6 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup almond flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 dash cinnamon
  • 1 1/2 cups quick-cooking oats
  • 4 ounces dark chocolate chunks (65-75%)

Directions

  1. Preheat the oven to 350° F.
  2. Line an 8x8” square baking pan with parchment paper and set aside.
  3. Place the peanut butter, brown rice syrup, maple syrup, and vanilla extract in a large mixing bowl. Whisk vigorously until smooth and combined.
  4. Add the almond flour, baking soda, salt, and cinnamon to the bowl. Stir with a rubber spatula to thoroughly combine. Fold in the oats and chocolate chunks, working until a stiff dough forms.
  5. Transfer the dough to the baking pan and press it into an even layer.
  6. Transfer the baking pan to the middle rack of the preheated oven.
  7. Bake the bars for 20-23 minutes until the edges are slightly golden brown and a toothpick inserted in the center comes out clean.
  8. Remove the baking pan from the oven.
  9. Transfer the bars to the refrigerator. Chill for at least 2 hours before slicing and serving.
  10. Lift the bars out from the pan by pulling up on the edges of the parchment paper. Slice into squares, and serve.
