A classic thick and chewy oatmeal raisin cookie easily made gluten-free.

Ingredients

  • 1 cup unsalted butter (softened)
  • 1 1/2 cups light brown sugar (packed)
  • 1/4 cup granulated sugar (50g per 1/4 cup)
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups gluten free all purpose flour
  • 2 3/4 cups quick cooking oats
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup raisins
  • 1/3 cup finely chopped walnuts (optional)

    Directions

    1. Line two baking sheets with silicone baking mats or parchment paper. Set aside.
    2. Place the butter, brown sugar and granulated sugar in a medium bowl. Use a mixer to beat on medium speed for 1 minute, or until well-combined.
    3. Add the eggs and vanilla extract and continue to beat for 30 seconds, until smooth.
