  • 1 3/4 cups gluten free flour (all-purpose, I used Better Batter)
  • 6 tablespoons cornstarch
  • 1 teaspoon xanthan gum (omit if your blend already contains it)
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon kosher salt
  • 1/2 cup granulated sugar
  • 6 tablespoons virgin coconut oil (melted and cooled, can use vegetable shortening, melted and cooled, or unsalted butter at room temperature)
  • 1/2 cup honey
  • 1 teaspoon pure vanilla extract
  • 1/2 cup milk (at room temperature, any kind)
  • 3 tablespoons plain yogurt (or sour cream, at room temperature)
  • 3 eggs (180 g, out of shell at room temperature, beaten)

    This is the most awesome gluten-free bread ever! We added a teaspoon of dough enhancer and made 4 mini loaves. Omitted the sugar, and did 3/4 c of honey instead.

    Very good bread! I just had a slice hot out of the oven! I am interested to see how it turns out for toast in the morning. I'm not sure how to adjust the recipe but I'm not supposed to be eating this much sugar. Any suggestions? I also have to say that it bubbled over in the oven in a big puddle but the clean-up was easy! I just took my long bread knife and slid it under the burned puddle and it slid right out! Definitely making this again!
