Ingredients

  • 1/2 cup light brown sugar (packed)
  • 1/2 cup plain yogurt
  • 1/2 cup buttermilk
  • 3 eggs (lightly beaten)
  • 2 tablespoons vegetable oil
  • 1 cup rice flour
  • 1/2 teaspoon gluten free baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 cups ground hazelnuts (finely, or ground almonds)
  • 2/3 cup dried fruit (coarsely chopped, medley)
  • 2 tablespoons honey
  • butter (to serve)

Directions

  1. Preheat the oven to 350°F. Grease a foil-lined 8 x 4-inch loaf pan.
  2. Mix sugar, yogurt, buttermilk, eggs and oil in a large bowl. Sift flour, baking powder and baking soda into a medium bowl. Fold into batter with the ground hazelnuts, dried fruit and honey. Spoon into prepared pan, smoothing top with a spatula.
  3. Bake for 50-60 mins or until golden and a toothpick inserted into the center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on a wire rack. Slice and serve with butter.
