  • 3 ounces rice flour (available at most grocery stores)
  • 3 ounces almond flour (available at most grocery stores)
  • 2 ounces tapioca flour (available at most grocery stores)
  • 2 ounces cornstarch (also known as corn flour)
  • 1 ounce dark cocoa powder (I use Hershey's Special Dark)
  • 1 teaspoon baking powder
  • 8 ounces unsalted butter
  • 1 pound semisweet chocolate chips
  • 6 ounces corn syrup (Karo brand doesn't contain any high-fructose corn syrup & is 100% glucose)
  • 5 eggs
  • 1 pound sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon almond extract
  • 1 teaspoon kosher salt (or sea)
  • 12 ounces nuts (chopped-macadamias, walnuts or pecans)
