Ingredients

  • 1/2 cup butter (at room temperature)
  • 1/4 cup brown sugar
  • 3 tablespoons honey
  • 1 egg
  • 2 1/4 cups gluten free all purpose flour (sifted)
  • 1/4 cup gluten-free cornstarch (sifted)
  • 1 teaspoon gluten-free baking powder
  • 1/2 teaspoon ground cinnamon
  • 7 ounces gluten free chocolate chips
  • 1/3 cup walnuts (chopped)

Directions

  1. Preheat oven to 350°F. Line 2 baking trays with parchment paper. Cream butter, sugar and honey until light and fluffy. Add egg and beat until combined. Fold in flour, cornstarch, baking powder and cinnamon. Fold in chocolate and walnuts.
  2. Roll into 2 tbsp balls and arrange on prepared trays. Using a fork, flatten slightly to around 2 1/2 inch diameter. Bake for 25 mins, or until lightly browned. Let cool on trays for 5 mins then transfer to a wire rack to cool completely.
