Ingredients

  • 1/2 cup rice flour
  • 1/2 cup spelt flour
  • 1/3 cup potato starch
  • 3 tablespoons tapioca flour (tapioca starch)
  • 2 tablespoons coconut sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon xanthan gum
  • 1/2 teaspoon baking soda
  • 3 tablespoons coconut oil
  • 2 eggs (chia, or regular egg)
  • 1 1/2 cups carrots (grated)

    Directions

    1. Whisk together flours, potato starch, sugar, baking powder, baking soda, and xanthan gum until combined (about 1 minute)
    2. Add chia eggs, buttermilk, oil, and vanilla and continue to whisk until only a few lumps remain
    3. Heat a large non-stick pan on medium-high heat
    4. Ladle pancake batter onto the pan and cook until top starts to bubble. Flip and cook the opposite side until golden brown.
    5. Serve immediately with preferred topping

    There's buttermilk in the title and the instructions, but it isn't listed in the ingredients. Vanilla isn't listed either but its in the instructions. And it doesn't say when to add the carrots. I can wing this, but I wouldn't expect I'd have to.
