Ingredients

  • 3 bananas (large ripe, *, mashed,, 1 1/2 cups)
  • 1 cup I Can't Believe It's Not Butter! Spread
  • 3/4 cup firmly packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups gluten-free flour
  • 2/3 cup old fashioned oats
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Directions

  1. Preheat oven to 350°. Brush 9 x 5-inch loaf pan with additional I Can't Believe It's Not Butter!® Spread; set aside.
  2. Combine mashed banana, I Can't Believe It's Not Butter!® Spread, brown sugar, eggs and vanilla in large bowl with wooden spoon. Stir in remaining ingredients until blended. Spoon into prepared pan*.
  3. Bake 1 hour to 1 hour 10 minutes until toothpick inserted in center comes out clean. Cool 20 minutes on wire rack; remove from pan and cool completely.

I didn't add sugar because I thought the bananas would be enough... Next time I'll add a little sugar. Overall it turned out pretty perfect.
