  • 4 ducks (1 per person)
  • 1 cup Burgundy wine
  • 1/2 cup granulated sugar
  • 1 cup brown sugar
  • 1 tablespoon cornstarch
  • 1 cup orange juice
  • 1 tablespoon grated orange rind
  • 1/4 teaspoon salt

Directions

  1. Brown duck in Dutch oven.
  2. Add wine and bake, covered, at 325 until tender, basting and turning often (about 2-1/2 to 3 hours).
  3. Combine sugars and cornstarch in a heavy saucepan.
  4. Add juice, rind and salt.
  5. Simmer and stir until thick.
  6. Serve over duck.
