  • 8 chicken drumsticks
  • 1/2 cup hoisin sauce
  • 1 tablespoon sesame seeds
  • 1 pound winter squash (peeled, diced)
  • 7 ounces green beans (trimmed)
  • 4 ounces baby corn (cut into 3/4 inch pieces)
  • 1 red onion (medium, halved, thinly sliced)
  • 1 clove garlic (minced)
  • 2 tablespoons soy sauce
  • 3 teaspoons sesame oil
  • 4 tablespoons cilantro leaves (fresh, chopped)

Directions

  1. Combine chicken and hoisin sauce. Cover with plastic wrap and chill for 30 mins.
  2. Preheat oven to 350°F. Line a baking tray with foil and lightly coat with oil. Arrange chicken on prepared tray, reserving marinade. Bake for 30 mins, brushing with marinade. Sprinkle with sesame seeds and bake for 10 mins, or until cooked through and sticky.
  3. Meanwhile, steam squash for 7 mins. Add beans and corn. Steam for 2-3 mins. Toss vegetables with onion, garlic, soy sauce, sesame oil and cilantro. Season. Transfer to serving plates and serve with chicken.
