  • gingerbread
  • 100 grams milk
  • 50 grams eggs
  • 200 grams honey
  • 1/2 cinnamon sticks
  • 1 star anise
  • 3 clove
  • 3 cardamom pods (crushed)
  • 1 teaspoon ground ginger
  • 1/2 lemon
  • 1/2 orange
  • 15 grams baking powder
  • 220 grams flour (plain)
  • salt
  • 100 grams milk
  • 20 grams sugar
  • 2 egg yolks
  • 1/2 gelatin (a leaf of)
  • 200 grams white chocolate
  • 300 grams whipped cream (soft peaks)

    Directions

    1. Bring the milk to the boil ,remove from the heat, add the spices and let them infuse their flavours for a few hours ...preferably overnight.
    2. Mix all the remaining ingredients for the bread together and then add the milk ( minus the bits) mix thoroughly together
    3. Add the mixture to a lined loaf tin and bake for about 40 mins at 170 deg approx.Allow to cool and then wrap in film and freeze overnight.( it needs to be frozen to be cut thinly )
