Description

A combination of whole-wheat flour and rye flour gives this fragrant gingerbread loaf distinctive flavor and a sturdier crumb than when made with all-purpose flour—and allows it to keep well at room temperature for longer, too, making it an ideal holiday gift from the kitchen. Candied orange peel, available at specialty food stores, are a decorative topping, and hints at the orange zest that's folded into the batter.

Ingredients

whole milk (11 cl.)
200 grams acacia honey (liquid, or thousand flowers)
60 grams butter
230 grams flour (130 grams wheat flour and 100 grams rye flour)
1 teaspoon baking soda
50 grams sugar cane (granulated)
salt
7 grams spices (gingerbread)
30 grams orange peel (candied, diced)

Directions

1Heat your oven to 170 degrees Celsius.
2In a saucepan, heat the milk, honey, and butter without letting them boil.
3In a bowl, pour the flours, baking soda, sugar, a pinch of salt, spices, and mix. Add the hot liquid and stir.
4Add the orange peel.
5Pour the mixture into a loaf pan lined with parchment paper.
6Bake for 50 minutes. Check with a knife that the gingerbread is cooked through.
7Let cool on a rack. Decorate with candied orange peel. Wrap in aluminium foil to keep it.
