So yummy! I doubled the time almost (70 minutes at 300) and I didn’t have quite enough honey, but it was still yummy! I liked that the carrots still had a bit of bite. Ginger and honey are two of my favorite things to cook with!

Nice flavor, but too spicy; I might try it again, but with way less pepper.

Not bad but I do like my carrots a little softer. I think maybe peel and steam beforehand might help them be softer.

The flavor was decent but the carrots need to cook much longer than what was listed in the recipe. I cooked for another 20 minutes and it still wasn't enough time!
