Ingredients

  • 1 kilogram tomatoes (chopped)
  • 220 grams cherries (pitted and chopped)
  • 5 grams green pepper (diced)
  • 5 grams onion (diced)
  • 1 clove garlic (minced)
  • 55 grams breadcrumbs
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • salt

Directions

  1. Place the tomatoes, cherries, green pepper, onion, garlic, breadcrumbs, and olive oil into a salad bowl. Refrigerate overnight.
  2. Blend the contents of the bowl in a blender to puree. Refrigerate for at least 2 hours. Stir in the vinegar and salt to taste before serving.

I have tried over two dozen different gazpacho recipes in my time and this one ranks up there with some of the best. This recipe was infused with flavor and adding the cherries into the recipe was absolute genius. I would rate this as a 4 star recipe any day and plan to make it again in the future.
