Gazpacho is a cold soup originating from the Andalusian region of Spain and widely eaten across Spain and Portugal, particularly during the warm summer months. This recipe for Gazpacho provides you with a sweet and savory soup with a light tartness from the cherries that is light and refreshing, making it the ideal lunch entree when it is blazing hot outside. Easy and simple to make, all the ingredients excluding the vinegar are refrigerated overnight and then blended with vinegar the next day until smooth and creamy.
Ingredients
- 1 kg tomatoes (chopped)
- 220 grams cherries (pitted and chopped)
- 5 grams green pepper (diced)
- 5 grams onion (diced)
- 1 clove garlic (minced)
- 55 grams breadcrumbs
- 2 Tbsp. olive oil
- 1 Tbsp. apple cider vinegar
- salt
Directions
- Place the tomatoes, cherries, green pepper, onion, garlic, breadcrumbs, and olive oil into a salad bowl. Refrigerate overnight.
- Blend the contents of the bowl in a blender to puree. Refrigerate for at least 2 hours. Stir in the vinegar and salt to taste before serving.
