- Preheat oven to 350 degrees F.
- Combine garlic, oregano, olive oil, mustard, salt and pepper. Mix until blended into a paste. Using a spatula or hands, rub garlic mixture all over pork, massaging into meat.
- Place pork roast in baking pan and roast uncovered in preheated oven. Roast 20 to 30 minutes per pound until internal temperature reaches between 145 degrees F. to 160 degrees F. using a digital thermometer. Remove from oven. Cover loosely with foil and let stand 10 minutes before slicing.

My first with this recipe tonight and it was a hit with the family! The pork was so moist and cooked in the time in the recipe. I haven't ever had a pork loin taste so good. Thanks!

It was yummy! I did add paprika for a little extra spice and truffle salt. It's a good, easy, and fast recipe.

Came out well and pork was moist. We used it on 2.5lb pork tenderloin. However, we felt it was missing a little something. I think the brown sugar suggestion below may be the ticket on the next try!

Delicious! Turned out o be so tender and flavorful. We used a roast with a big fatty layer that burnt a little but that’s our own fault
