  • 3 cups bread flour
  • 1 tablespoon sugar
  • 2 tsp instant yesat
  • 1 teaspoon salt
  • 5 tablespoons olive oil
  • 1/4 cup milk
  • 2 cloves garlic (minced)
  • 2 tablespoons fresh parsley leaves (chopped)

    Directions

    1. Preheat oven to 400°F. Line a sheet tray with parchment paper.
    2. In the bowl of a stand mixer, combine flour, sugar, yeast and salt. Add olive oil, milk and 1 cup lukewarm water and mix until combined. Knead until smooth and elastic, around 8 mins. Transfer to an oiled bowl, cover with plastic wrap and let proof for 1 hour, or until doubled in size.
    3. Divide the dough into 15 pieces then roll each piece into a long rope and tie into a knot. Transfer knots to prepared tray, cover with a clean tea towel and set aside to proof for 30 mins. Bake proofed knots for 15-20 mins, until golden brown.
    4. Meanwhile, heat olive oil in a frying pan over medium heat. Cook garlic until lightly browned. Add parsley and cook for 1 min. Remove from heat.
    5. Remove knots from oven and toss with garlic and parsley mixture. Season. Serve warm or at room temperature.
